Eggless Multigrain Muffin



Ingredients:


1/2 cup wheat flour
1/2 cup Finger millet flour( Ragi flour)
1 Flax Egg (1 tbsp flax meal + 3 tablespoons water)
1/2 cup all-purpose flour
1 1/2 tsp baking powder
pinch of salt
1/2 cup milk
1 cup dark brown sugar
1/2 cup softened butter
1/2 cup chopped almonds

Preparation Method:

1. Preheat the oven to 160 degree C and grease your muffin cups/tray with butter and dust it with flour.

2. Take a large bowl and beat in the sugar, butter ,baking powder, flax meal egg and beat until its combined well.

3. Now add milk and all the flours and keep mixing until it looks creamy.

4. Grease your muffin cups and pour the batter and bake in the preheated oven for 40 minutes or until your toothpick comes out clean.

5. Remove it from the oven and allow it to cool before you serve.

6. you can serve it as it is or top it up with your favorite frosting and choceur.

Homemade Marshmallow Fondant Cake for Valentine's Day

This is the first time I made my fondant cake without using any cookie cutters or any cake decorating fondant kit. Why? because I had none of those and wanted to try this technique of decorating a cake.  I made my own fondant with few quick and easy steps and ingredients and thought of sharing it with you all. Ingredients for the Fondant:

- Half of a 16-ounce bag marshmallows
- 1 pound powdered/Icing sugar (4 cups), plus extra for dusting
- 2 tbsp water
- Food coloring or flavored extracts, optional


Preparation Method:

1. Dust your counter or a large cutting board with powdered sugar. Place the marshmallows and the water in a large microwave-safe bowl.
Microwave on high for 1 minute, until the marshmallows are puffy and expanded.

2. Stir the marshmallows with a rubber spatula until they are melted and smooth.
If some unmelted marshmallow pieces remain, return to the microwave for 30-45 seconds, until the marshmallow mixture is entirely smooth and free of lumps.
If you want colored or flavored fondant, you can add several drops of food coloring or extracts at this point and stir until incorporated.
If you want to create multiple colors or flavors from one batch of fondant, do not add the colors or flavors now. Instead, refer to step 6 below for instructions.

3. Add the powdered sugar and begin to stir with the spatula. Stir until the sugar begins to incorporate and it becomes impossible to stir anymore.

4. Scrape the marshmallow-sugar mixture out onto the prepared work surface. It will be sticky and lumpy, with lots of sugar that has not been incorporated yet--this is normal.
Dust your hands with powdered sugar, and begin to knead the fondant mixture like bread dough, working the sugar into the marshmallow with your hands.

5. Continue to knead the fondant until it smoothes out and loses its stickiness.
Add more sugar if necessary, but stop adding sugar once it is smooth--too much sugar will make it stiff and difficult to work with. Once the fondant is a smooth ball, it is ready to be used.
You can now roll it out, shape it, or wrap it in cling wrap to use later.
Well-wrapped fondant can be stored in a cool room or in the refrigerator, and needs to be kneaded until supple before later use.

6. If you want to add coloring or flavoring to your fondant, flatten it into a round disc. You might want to wear gloves to avoid getting food coloring on your hands during this step.
 Add your desired amount of coloring or flavoring to the center of the disc, and fold the disc over on itself so that the color or flavor is enclosed in the center of the fondant ball.

7. Begin to knead the ball of fondant just like you did before. As you work it, you will begin to see streaks of color coming through from the center.
 Continue to knead until the streaks are gone and the fondant is a uniform color. Your fondant is now ready to be used or stored as outlined above.

Classic Italian Dessert Tiramisu Cake



Ingredients:

2 egg yolks
1/2 cup caster sugar
300 grams mascarpone cheese or any cheese cream available at home
400 grams thickened cream/ heavy whipped cream
1 pack Savoiardi lady fingers
1 cup cold espresso/any coffee you like
2 teaspoon any essence you like(vanilla, rum, fruit etc)
coco powder for dusting

Preparation Method:

1. Take a large bowl, combine egg yolks and caster sugar and whisk them together so that sugar melts nicely with the egg yolks.
2. Now add mascarpone cheese to the egg yolks and sugar mixture and mix them well.
3. Once you have done that add the thickened cream into the mixture and fold them together gently.
4. Now add the essence/ liqueur to the mixture and fold the mixture again.
5. Take a bowl with cold espresso coffee with few drops of your favorite essence and set aside.
6. Split the lady fingers in half, and line the bottom and sides of a large glass bowl. Brush with coffee liqueur.
7. Spoon half of the cream filling over the lady fingers. Repeat ladyfingers, coffee liqueur and filling layers.
8. Garnish with chocolate curls and Refrigerate several hours or overnight.
9. Just before serving, sieve the coco powder on top of the Tiramisu and top it with caramelized almonds. Enjoy!!!

Tips:
For caramelized almonds:
Dry roast the almonds on medium heat and add icing sugar to it.  Mix them well so that almonds are nicely coated with the icing.  Refrigerate them for about 10 minutes and you will have crunchy caramelized Almonds.
For Chocolate Curls: Use a vegetable peeler and run it down the edge of the chocolate bar.
For Coco powder dusting: Do not sieve the coco powder on Tiramisu before refrigerating. This has to be just before serving otherwise coco powder would taste bitter.

Simple and delicious Brownie cake

Ingredients:

    2 cups sugar
    1 cup butter
    1/2 cup cocoa powder
    1 teaspoon vanilla esanse
    3-4 eggs
    1 1/2 cups all purpose flour/Maida
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/2 cup walnut halves

Preparation Method:
  •  Melt the butter and mix all ingredients in the order given.   
  •  Bake at 350 degrees F for 20-30 minutes in a greased pan.
  • Garnish with walnut halves or your choice of nuts.

Creamy white cake


Ingredients
125g butter
1 1/2 cup Caster sugar
2 eggs beaten
5 drops vanilla essence
250g plain flour
1 tsp baking soda
1/2 cup milk
Buttersoft frosting
 
Preparation Method

 * Preheat oven to 180 degrees C (350 degrees F) or 160 degrees C for fan forced. Grease a loaf pan.
 * Line the base and sides with baking paper.
 *  Mix all the ingredients together and beat it using electrical mixture until light and fluffy
 * Bake in the oven for approximately 40 mins or until a skewer comes out clean
 * Rest in the tin for 5 minutes before turning out onto a wire rack to cool.

Choco Nut Banana Bread/Cake


Ingredients

  125g butter
  1 1/2 cup castor sugar
  2 eggs beaten
  1 cup ripe bananas, mashed
  5 drops vanilla
  250g plain flour
  1 tsp baking soda
  1/2 cup milk
  Chocolate cubes or biscuits
   
Preparation Method
  • Preheat oven to 180 degrees C (350 degrees F) or 160 degrees C for fan forced. Grease a loaf pan.
  • Line the base and sides with baking paper. 
  •  Mix all the ingredients together and beat it using electrical mixture until light and fluffy
  • Bake in the oven for approximately 40 mins or until a skewer comes out clean 
  • Rest in the tin for 5 minutes before turning out onto a wire rack to cool.
