Shahi Dessert Shahi Tukda



Ingredients:

6 Bread slices (White or brown any)
1 cup milk
200 grams Nestle Sweet Condense milk
1 cup roasted almonds
2 tbsp Ghee/butter

Preparation Method:

1. Take the stack of bread slices and cut their edges.  After which you can cut them in desired shapes for your dessert.  Now heat a non stick pan or a skillet and put some ghee or butter to it.  Toast them till they are golden brown and crisp.

2. Now take another pan and boil milk on medium heat.  To it add the Nestle  sweet condense milk and mix well. The condense milk will melt with the milk and become liquid.  Keep mixing and cooking it until it becomes thick but runny.

3. Its time to assemble your dessert now.  Pour your mixture first and top it with your crunchy toasts.  Now add another layer of the mixture and garnish with roasted almonds.  You may sprinkle some crushed nuts as well and serve.

Quick Kachori ke Dal


Ingredients:

1 Pack of Haldiram Gol Kachauri
1 cup Toor Dal
1 cup Moong Dal
1 medium size tomato
1 chopped onion
1 bite size piece of Jaggery
1 tsp Tamarind pulp
Salt to taste
1 tsp cumin seeds
1 tbsp Coriander powder
1 tsp chili powder
1 tsp turmeric powder
chopped coriander
2 green chilies(Optional)
2-3 tbsp Oil/Ghee
Water as required

Preparation Method:

1. Take a pressure cooker and add washed lentils, chopped tomato, salt, coriander powder, chili powder and turmeric powder and cook until good 1-2 whistles. In the mean time soak your kachoris in hot water to make then soft and keep it aside.

2. Now for tempering, heat oil in a pan and add some ghee or oil. To it add cumin seeds and once they splutter add chopped onions and cook until they are golden brown. Add the pressure cooked dal to the tempering and mix well. Add jaggery, tamarind pulp and a cup of water and mix it well. Cook for another 3-4 mins and dip in your kachoris to it. Cover the lid and cook for another 5 minutes in low heat.

3. Garnish with chopped coriander leaves and ghee. Serve hot with steamed Rice or paratha and enjoy.

Healthy Weet-Bix Cookies


Ingredients:

6 Weet-Bix crushed
1 cup sugar( as preferred)
1 cup plain flour
2 tbsp Milk
1 tsp baking powder
125 g Butter/Margarine
Almonds and pumpkin seeds to garnish





Preparation Method:

1. Preheat the oven at 150 Fan forced.
2. Sift the flour and baking powder in a bowl and add butter and sugar and mix it well with electric beater.
3. Now add crushed Weet-Bix.  To it add milk and beat again.
4. Give it a desired shape (I have rolled into flat balls) and garnish with almonds and pumpkin seeds on top.
5. Bake for 10 minutes or until golden brown. and store in a air tight container after cooling.

Peanut and Sesame Brittles or Mungfali and Til ke Chikki


Ingredients:

1 cup Roasted Peanuts
1/4 cup roasted Sesame seeds
1 tbsp Ghee/clarified butter
3/4 cup Jaggery

Preparation Method:

1. Heat a pan in medium heat and add 1/2 tbsp of ghee.  To it add Jaggery and cook until it melts to a thick syrup.

2. Now add roasted peanuts and sesame to it and mix well.

3. Take a pan or a tray and grease it with rest of the ghee to cast your chikki.

4. Finally pour the mixture to your pan and level it and keep it aside to cool.  After few minutes give it a desired shape and let it cool and store it in a air tight container.
